Feeling Fruity


Its the end of the summer and approaching the end of berry time! This means berries are on sale at the grocery- My favorite, raspberries are usually super expensive but they're BOGO at Harris Teeter this week (and most weeks lately) and 2 for $4 at publix! Time to stock up!
But wait, you say, can't stock up on berries! They get moldy in 4 or 5 days! Let me share with you some secrets to keeping berries so fresh and delicious:
Always rinse all your berries right away gently in a mixture 1 part white vinegar 10 parts water. It's diluted enough not to effect the flavor of the berry, but gets in the little crannies of the berry and keeps them mold free for over a week!
Freeze what you won't be eating this week. Frozen berries are delicious in smoothies or especially on ice cream. I like to freeze low fat sugar free yogurts (may I reccomend Publix brand- often 10 for $5 and tons of delicious flavors!) and mix in berries for extra deliciousness! Just let the yogurt thaw a bit and it gets really creamy, perfect on a hot summer day. My favorite with raspberries is mandarin orange!
My tips for freezing:
1)Rinse berries in vinegar/water mixture. lay out to dry on paper towels.
2)Place on cookie sheets so they are not touching and freeze for 1 hour. This makes sure the berries freeze separately and makes it MUCH easier to get out just a couple for a snack!
3)Dump cookie sheet into a freeze safe container and enjoy at your convenience!
